بدأت المرحلة الثانية من المشروع في .2007 تم تقييم محتوى جسم سمك الزبيدي ومناسله من الأحماض الأمينية الهامة (EAA (لكل من الذكور والإناث خلال العامين 2009 / .2010 جمعت عينات من سوق السمك في الكويت خلال الفترة من نوفمبر 2007 إلى سبتمبر ،2008 كان متوسط الطول القياسي للذكور 1.0±19.9سم ووزنها 98±310 جم، أما متوسط طول الإناث فهو 2.4±21.8 سم ووزنها 188±422 جم. كما اختيرت عينة من خمس سمكات من الإناث والذكور في كل شهر، وتم تقطيع العينة وخلطها وحفظها باستخدام التجميد الناشف. أجريت التحاليل على عينات من الجسم والمناسل بعد معاجلتها بمحلول HCI N6 في حرارة 110 درجات مئوية لمدة 24 ساعة، وتم رصد الأحماض الأمينية بطريقة HPLC وتقدير محتوى EAA للزبيدي بناء على معرفة متطلبات الحمض Iysine التي تعادل 4.5 جم لكل 100 جرام بروتين لسمكة الباس البحري الأسيوي (1998 ,Kaushik(. لم يكن هناك أية اختلافات إحصائية (0.05

Abstract English

Phase 2 of this project was initiated in 2007. The following experiment was conducted in 2009/2010 to investigate whole body and essential egg amino acid (EAA) composition of male and female Zobaidy. Fish were collected from fish market in Kuwait. The fish had a mean standard length of 19.9±1.0 and 21.8±2.4 cm, mean weight of 310±98 g and 422±188 g for males and females, respectively. Monthly freeze-dried samples of five male and five females during November 2007 to September 2008 were pooled separately and used for amino acid analysis. Whole body tissue and eggs samples were hydrolyzed in a vacuum chamber using 6 N HCl at 110°C for 24 hours prior to amino acid analysis. Amino acids were determined by a high-performance liquid chromatography (HPLC) method. The EAA requirement profile of Zobaidy was estimated based on the known lysine requirement value of 4.5 g/100 g protein for Asian sea bass (Kaushik, 1998). There was no significant difference (P>0.05) between the whole body amino acid (AA) composition of male and female Zobaidy, except for glutamic acid and serine. There were no significant differences (P>0.05) between the contents of leucine, methionine, phenylalanine and threonine in whole body and eggs. But arginine, isoleucine and valine contents in eggs were significantly higher than those of whole body, while lysine and histidine in whole body was significantly higher than that of eggs.
