Characterization of Losses in Selected Perishable Foods in the State of Kuwait

كجزء من موضوع الأمن الغذائي في دولة الكويت لفتت عملية تقييم الخسائر الغذائية خلال مراحل الإنتاج والاستيراد والمداولة والصناعة والتخزين أنظار علماء ومخططي السياسات الغذائية. سيتم ضمن هذا المشروع البحثي المقترح جمع معلومات أساسية حول نوعية تلف سلع غذائية مختارة من الأصناف سريعة التلف مثل الخضراوات ومنتجات اللحوم والأسماك والألبان. وسيتم توثيق السلسلة الغذائية لتلك الأصناف من المواد الغذائية المختارة سواء المنتجة محلياً أو المستورد منها وتقييم خسائرها باستخدام الأساليب الفيزيائية والكيميائية والحسية والميكروبيولوجية المجهرية وقياس التغيرات في جودتها. وسيتم القيام بعملية مسح لمراحل الإنتاج والتوزيع والتسويق بغرض التعرف على مسببات وأماكن تلف المنتجات وخسائرها ولتحديد القيمة الاقتصادية لهذه الخسائر، وستؤدي تلك المعلومات إلى توفير بيانات أساسية يمكن تطبيقها في مشاريع لاحقة لتطوير واختيار التكنولوجية المناسبة لتحسين ورفع جودة السلع الغذائية سريعة التلف في دولة الكويت.

As part of food security for the State of Kuwait, the assessment of food losses during production, import, processing, handling and storage operations has attracted the attention of food scientists and planners. Under this proposed research project, baseline data on the quality and spoilage/losses of selected perishable food commodities, e.g. vegetables, meat, fish, milk and eggs will be collected. Food chains for selected food items will be prepared. Assessment of food losses at different points of the food chains will be carried out using physical, chemical, sensory and microbiological techniques in the laboratory. Changes in quality of domestically produced as well as imported foods will be measured. The food production and distribution chains will be surveyed to identify the causes and areas of quality deterioration and the product of losses and to determine the economic value of the losses. The scientific information obtained during this research project would provide the necessary input or database to be implemented in subsequent projects for developing and revising technologies that would improve the current situation in the State of Kuwait.
